Cashew with Palm Sugar and Lime Leaf

We've taken our jumbo 180-grade skinless cashews and glazed them into an addictive sweet and sour treat. Jaggery (palm sugar) discs from An Giang, Việt Nam coat these cashews giving a rich flavour similar to caramel, followed by the citrus aftertaste of Makrut lime leaves. (You may be most familiar with Makrut ["kaffir"] lime leaves in Thai tom yum soup, or coated on grilled chicken.)
